William Hallet has “a huge whiskey list.” Of equal importance, “the owner’s great. The staff is great.” All of the meat comes from next door, at the International Meat Market. This is community, in the glass and on the plate. “They do a thing called Meat Market Mondays, where you purchase your meat next door, bring it into the restaurant, and they’ll cook it up for you.” Talk about taking control of your meal.
