In another city, in an older country, we might bracket our meals with an aperitif and a digestif. Some residents of those places might view ours as young, brash, and too fast-paced, forward-looking and too hasty to sit and indulge in a pre- or post-meal linger.

If New York City is an indicator, then they couldn’t be more wrong. In glasses around the city, there’s a world of slow, bitter and bittersweet seduction made to make your evenings longer and your meals easier to enjoy.

Aperitifs are becoming fashionable – not quite trendy, but definitely gazing into the abyss. Digestifs however, are still lesser known.
