4) The New Staple: Drink Your Veggies
Whether it’s pickled ramps or celery bitters, veggies are solidifying their place next to fruits on the cocktail menu. While The Summit Bar’s staple Ground to Glass has long shown that pureed veggies can taste way better than V-8, and the Bloody Mary is a brunch staple (though it's worth noting that tomatoes are a fruit), cucumbers and leafy greens are shooting up on menus all over town. Greens are drinkable, too.
