You're Going to Flip For the New Twist Betony Puts on Rum and Coke
We know, rum and Coke? Yawn. But hold that eye-roll for a second, because Betony general manager Eamon Rockey is putting a new spin on the classic caffeinated cocktail that you’re going to flip for.
With fresh kola nut and a raw egg, Rockey has transformed the time honored Cuba Libre into a Kola Flip, taking it from its origins as a refreshing tropical libation to a rich and frothy wintry after-dinner drink reminiscent of eggnog. According to Serious Eats, the enterprising barman has been experimenting at home with kola nut, which is actually the fruit of an evergreen plant found in the tropics of Africa and was once used to flavor cola soft drinks, for years before bringing his experiments to work with him.
Behind Betony’s bar he combines his own housemade kola syrup with Zaya, an estate produced blended rum from Trinidad and Tobago, Montenegro amaro to mimic the spicy and herbal qualities found in Coca-Cola, and a whole egg. When shaken vigorously, the concoction takes on a foamy and creamy consistency. To finish it off, he strains it twice, and serves it topped with fresh ground nutmeg.
